Bartender – Job Description 

Location: Lincoln, NE · Schedule: Evenings and weekends, typically shifts between 12 pm – 11 pm

As a Bartender at The Mill, you'll craft great cocktails and pour our beer and wine with care. You'll give every guest fast, friendly service and help set the tone and personality of the bar. Our staff are the core of our culture.

About The Mill 

The Mill Coffee & Tea is a small-batch, craft coffee roaster with an espresso bar, tea, craft beer, cocktails, and wine houses in Lincoln, Nebraska. Since our first store in 1975, our mission has been to provide great food and beverages in a warm, welcoming environment.

What You'll Do 

  • Make cocktails, beer, and wine service to our recipes and standards, every time. 

  • Give fast, friendly, consistent service and make every guest feel welcome and appreciated. 

  • Know our beer, wine, and liquor offerings and help guests find something they'll love. 

  • Complete daily bar prep, including stocking, garnishes, and batching, so the bar is ready for service. 

  • Run the POS and handle payments accurately. 

  • Follow opening and closing procedures. 

  • Keep the bar clean, organized, and well stocked, including glassware, equipment, and merchandise. 

  • Help with inventory counts when asked. 

  • Share ideas for new and seasonal drinks. 

  • Serve responsibly: check IDs, follow alcohol service laws, and calmly de-escalate tense situations. 

  • Solve guest problems with a positive, can-do attitude. 

  • Work events and collaborate with bartenders, baristas, kitchen staff, and leadership to keep service smooth. 

  • Be reliable: show up on time and ready to go, communicate your availability, and follow call-out procedures. 

What You Bring 

  • 1+ year of bartending experience 

  • Solid cocktail skills and working knowledge of beer and wine 

  • Excellent customer service, with enthusiasm and energy 

  • Calm under pressure, with good judgment and the ability to de-escalate tense interactions 

  • Organized, detail-oriented, and able to multitask during a rush 

  • Comfortable with basic math and hospitality tech like Square, Bar Patrol, and Cocktail Flow 

  • Clear verbal and written communication skills; fluency in other languages is highly valued 

  • Meets Nebraska's minimum age requirement to serve alcohol 

  • Available evenings, weekends, and special events 

  • Able to stand and stay active for shifts of up to 7 hours, bend and twist frequently, lift up to 30 lbs, and see clearly at near and far distances

Compensation: This is a tipped position paying up to $25.00 per hour, including an average tip of $11.00 per hour. Tips aren't guaranteed and vary by location, position, hours, and quality of service. Average hourly tips are based on current-year reporting. 

Hours: Shifts typically fall between 12 pm and 11 pm and run 6 to 9 hours. 

Other Important Info 

  • Shifts: Work at least three shifts each week. 

  • Be on time: Have reliable transportation so you can arrive on time for scheduled shifts and mandatory meetings. 

  • Food Handler Permit: Obtain and maintain a Food Handler Permit or certification as required by local regulations. This is a prerequisite to employment. 

  • Training: Complete, pass, and maintain all trainings, certifications, and knowledge tests, including federal, state, and local alcohol service regulations. We'll set you up for success. 

  • Policies: Follow all company policies and procedures in The Mill Employee Handbook.
